Creamy Tomato Thai Soup

Creamy Tomato Thai Soup

3 large tomatoes
1 red pepper
1/4 onion
1 jalapeno
1 garlic clove
3/4" ginger
1/2 c young coconut meat & water or 1/2 c coconut milk
2 T lemon juice
1 avocado
1 T Nama Shoyu
2 T agave
2 T olive oil
4 basil leaves
dash salt, pepper, cayenne, cumin
1/2 - 1 c water (depending on how much coconut water was used, add to your preferred thickness)
Blend all together, serve and Enjoy!
