Cookies, Cacao, Coconut & Sun Power

I have cookies in the dehydrator this morning. Last night I decided to try out a recipe – it is adapted from Renee Loux Underkoffler’s Living Cuisine:

Coconut & Caramel Cookies
I call them Coconut Chocolate Chip Cookies – because I added 1/3 –1/2 c cacao nibs

3 c dried shredded coconut
1 c soft pitted dates
3 T raw almond butter
2 T maple syrup
2 T cold-pressed coconut butter
2 T vanilla extract
1 T cinnamon
2 t nutmeg
pinch Celtic sea salt

Roll into balls or roll dough into a log & slice.

We have a few jars of this company’s products around at work.. Dorit brought them & gave them to us when she was here. http://www.ulimanamana.com/
