My dehydrator has been going non-stop lately! Next I need to experiment with Jicama fries before I go.. they are on the list for the Monday after the trip. & it's been awhile since I made them. I am going to try 2 ways of making them and pick my favorite.
But for now I am going to share my buckwheat granola creation - It turned out even better than I expected. The reason it happened was that I had an abundance of sprouted buckwheat (I forgot to bring it last Monday to show making the corn chips ((which I will do this Monday coming, going to be a very busy day!))) ..and I had extra soaked almonds from filming.. from there I just took a look around the kitchen at what I had.. pecan meal, it was 1/2 the price of pecans & I bought a bag last week.. frozen berries in the freezer went in.. this is how some great recipes get started (rawkalicious cookies! ) k....
Buckwheat Berry Granola
4-6 c Buckwheat
1 c Almonds
1 c Sunflower seeds
2 c Pecan meal
1/2 c Pumpkin seeds
2 c Berries
1 c Dates
1 c Maple syrup
1 Banana
1 t Cinnamon
1 t Vanilla
Place Buckwheat in large bowl. Add Pecan meal, if using whole pecans, process them until fine in the food processor & then add them. Process Almonds, Sunflower & Pumpkin seeds until chunky. I added the frozen berries to the nuts and seeds and processed it all together. then add to the buckwheat & pecans. Process Dates & Banana and some maple syrup to make a smooth paste and add this & the rest of maple syrup and vanilla & cinnamon to bowl, Stir until well combined and then spead out on teflx sheets. This is going to be broken apart so spread out loosely, chunkily (?) but not too thickly, just so it breaks apart easily after its finished. Dehydrate for 6-8 hours then flip onto mesh screen and continue dehydrating for another 8-12 hours or until very dry. Break apart and store in a cool dry place. Will last for a long time, a month or two.. maybe longer ..not sure because it always gets eaten too quickly. ; )
